2 C Dried Red Lentils, rinsed
7 C Water
1 large onion, chopped
1T Flour
¼ C Olive Oil
½ t ground cumin
Juice of 1 lemon
Pinch of salt & pepper
Brown onion in 2 T of oil. Add lentils and water. Simmer 1 hour.
Mix remaining ingredients in a bowl, minus the lemon. Stir well, add to soup. Bring to a simmer.
Add lemon juice 5 minutes before serving.
